Pancakes..

I've been experimenting with new recipes for the Missing Goat label.
Blueberry Syrup.  Thin, chunky, sweet, not so sweet,
This called for some good pancakes... made from scratch of course!
So, Nigela came to the rescue with her yummy recipe, which you keep in a container to use when the pancake ache hits.
Day or night

Dry Mix:
3 cups flour
3 Tablespoons baking powder
2 tsp baking soda
1 tsp salt
2 1/2 ounces fine sugar

Mix all the dried ingredients and keep on hand in the cupboard.
My wee assistant did the mixing.

The flour was top...

...to bottom.

When you decide you want pancakes, you use 3/4 cup of dried mix and add one egg, one cup plus 1/8th of a cup of milk, and one tablespoon melted butter.

Wisk.

Cook.

Enjoy!
This is my chunky version of a syrup - it's pretty damn yummy.

Here is where, I have to say, I thought I was rather clever - I doubled the dried mix,
and put it in an air tight container.
I then used my dry erase marker to write what to add to make the pancakes.
I also did a cute little story on lavender over at HGTV.ca
