Back to Reality...


Not that reality is bad.  
It's Meyer Lemon Season!!!
Yeah.


They are sweeter than regular lemons, and you can preserve them to use all year.
I highly recommend organic as you are eating the skin and all.
Give 6 of them a wash...


Boil them in a pot for 5 minutes...


Cut into 8 wedges, remove seeds...


Toss in 2/3 cup of course salt...


Stuff into a jar.
Place them on your counter for five days, and once a day, give them a toss about.
Add 1/4 cup of olive oil to the top after five days, place in the fridge.
These keep for a year.
You can chop them up fine and use them in hummus, pasta, roasted on chicken, in couscous, on salmon...anything really that would benefit from a little zest!

Thanks for the ideas for using the preserved lemons. I have a greenhouse full of citrus, mainly meyer lemons, and have just about run out of ideas on how to use them. Last year, I preserved them and didn't use a jar. I don't cook Moroccan, and frankly was at a loss on how to use them. Do you make marmalades with them. I wonder about a jelly or jam. We have so much in common, though we live far apart. Happy fruiting New Year.

Mmm..love Meyer lemons. My favourite way of using preserved lemons is a roasted chicken baked in a pot sealed with dough. Chuck in a bunch of veg and stock and the results are fantastic. Beautiful photos :)

I have never heard of this. I love lemons but they get bad in my fridge so quickly. Just recently started washing lemons and limes with water and a drop of bleach. Rinse well and dry them. I then put them in the crisper drawer. They last weeks. They say even being exposed to one bad lemon in a bag can make them mold quickly so it removes any bacteria.
I like idea and I am going to try it.. Yum!!!

My lemon curd is so thankful it is once again meyer lemon season. Tastes so much better with these babies!
