It's Meyer Lemon Season!!!
Yeah.
They are sweeter than regular lemons, and you can preserve them to use all year.
I highly recommend organic as you are eating the skin and all.
Give 6 of them a wash...
Boil them in a pot for 5 minutes...
Cut into 8 wedges, remove seeds...
Toss in 2/3 cup of course salt...
Stuff into a jar.
Place them on your counter for five days, and once a day, give them a toss about.
Add 1/4 cup of olive oil to the top after five days, place in the fridge.
These keep for a year.
You can chop them up fine and use them in hummus, pasta, roasted on chicken, in couscous, on salmon...anything really that would benefit from a little zest!
